Why do certain "kinds" of restaurants follow VERY clicheed styles?

For instance, ALL "Indian restaurants" seem to have a "lunch buffet", all "Mexican" restaurants are "family" Mexican restaurants, Italian restaurants seem to be mostly owned by Greeks, Japanese restaurants are mostly owned by Koreans, and Thai restaurants almost invariably have unique (hah) names like "Bangkok" or "Siam" or even "Phad Thai"...
